A friend posted a picture of these cookies and they looked delicious, so we gave them a try. We loved them! They are a great mix of salty and sweet. Thanks Erin for the dessertnowdinnerlater.com link! I had no self control and ate about 6 cookies on day 1. However, the boys loved them too and now want me to make more! :)
Makes about 2 dozen
cookies. Bake time: 11-15 minutes.
You will need:
·
1/2 cup (1 stick) butter, room temperature
·
1/4 cup, plus 2 Tbsp sugar
·
1/4 cup, plus 2 Tbsp brown sugar
·
1/2 tsp vanilla
·
1 egg
·
1/2 tsp salt
·
1/2 tsp baking soda
·
1 1/2 cups flour
·
3/4 cup stick pretzels, broken into thirds
·
1/2 cup caramel bits
·
1/2 cup semi-sweet chocolate chips
·
Parchment paper, spatula, cookie sheets
Directions:
1. Use a mixer (like a standing KitchenAid) and cream the butter with the
white and brown sugars. Add vanilla and egg, mix together.
2. Combine salt, flour, baking soda.
Gradually add flour mix to the wet mixture. Mix until it is
combined.
3. Using a spatula, fold in broken pretzels,
caramel bits, and the chocolate chips. The batter gets really thick at this point.
4. Cover a baking sheet with parchment paper.
5. Spoon cookie mix onto covered baking sheet.
6. Bake at 350 degrees F for 11-12 minutes, or
until lightly browned.
