Welcome! I am a mom to two wonderful kids, a lovely retired greyhound, and a wife to a great husband. Needless to say, there are a lot of daily messes to clean up around our house. Pumpkin Seeds

We usually wait to carve our pumpkin until a few days before Halloween (we have ravenous squirrels that eat pumpkins near us). I love eating roasted pumpkin seeds and the kids are starting to like them too. If you've never made them, give them a try! They are really easy to make and only take about 20 minutes to make (from cleaning to baking)

You will need:
  • Cookie sheet
  • Pumpkin Seeds
  • Vegetable Oil
  • Salt

Directions:
1. Cut the top of the pumpkin off.
2. Scoop out the seeds and set aside the seeds.
3. Take off any goop and rinse the seeds well.
4. Blot dry with a towel.
5. Toss seeds, vegetable oil (1 tablespoon of oil per cup of seeds), and salt (to taste) in a bowl.
6. Spread seeds on a cookie sheet and bake at 375 degrees F until golden brown, about 10 to 15 minutes.

Allow to cool before eating!
