Fall Inspired Pie Cookies





Higgins and I went to the park after we dropped Bernardo off at school. The leaves were already changing colors! I suddenly had a need to do some quick baking. These are a great treat for fall, and pretty easy to make too. I used a store bought pie crust (Pillsbury brand in the refrigerated section at the grocery store), but you could probably use sugar cookie dough too.

You will need:
  • Pie crust (refrigerated)
  • Sugar
  • Flour
  • 1 egg
  • Filling: marshmallows, mini chocolate chips, peanut butter, jam, pumpkin pie filling, cherry pie filling, etc.
  • Misc: Parchment paper, cookie sheet, rolling pin
  • Cookie cutters

Directions:
1.   Preheat the oven to 375 degrees F. 
2.   Cover a cookie sheet with parchment paper.
3.   Whisk egg and set aside.
4.   Roll out pie crust on a floured surface (I used a cookie sheet so I wouldn't have a 
     mess to clean up on the counter). You want it to be about 1/8" thick.

5.   Cut out leaves or pumpkins shapes with the cookie cutters. Make sure you cut 
      2 for each cookie!
6.   Place filling in the middle. Leave enough room around the edges to seal the 
      cookie together. If you have regular sized chocolate chips, you might want to 
      melt or slightly melt them first in the microwave to make sure they melt during 
      baking.

7.   Brush egg wash around the edges. 

8.   Place another cookie on top and press the to seal around the edges

10.  Place the cookies on the parchment paper covered cookie sheet. Brush with 
      egg wash and sprinkle on sugar.

11.  Bake for 10-12 minutes (until edges start to brown).
12.  Remove from oven and let sit for a few minutes to cool. Enjoy!
