- 1 onion, chopped
- (1) 14 1/2 oz can tomato sauce
- (1) 14 1/2 oz can whole crushed tomatoes, drained
- 1 package (2 cups) shredded Colby Jack cheese
- 1 envelope enchilada seasoning
- 6 tortillas
- Misc.: non-stick cooking spray, skillet, baking dish (an 8x8 works well), vegetable oil
Directions:
1. Preheat oven to 350 degrees F.

3. In a saucepan, cook soup, crushed tomatoes, tomato sauce, and seasoning until heated through.
4. Add browned meat and onions and simmer on low heat.
5. Heat tortillas until they are warm (but still soft). If you are not using a non-stick pan, use a little oil to coat the pan so the tortillas don't stick.
