Pick Strawberries Day

It's Pick Strawberries Day! We have strawberries growing in our backyard, so we're just going to pick from there. If you don't have a garden (or the birds ate them all, like they did to mine last year), see if you have a Pick Your Own farm near you. What's better than chocolate and strawberries? Nothing! I found this recipe for a dessert pizza in a magazine a few years ago.

You will need:

Crust:
1 box of brownie mix
1/3 cup boiling water
1 egg
1/4 cup vegetable oil

Topping:
1 tsp vanilla extract
2 cups sliced strawberries
1 egg
1/2 cup sugar
1 to 2 medium bananas, sliced
(1) 8 oz package cream cheese, softened (Place on plate and microwave for 20 seconds on each side. Make sure to take wrapper off first!)
1 square (1 oz) semisweet chocolate, melted. (If you love chocolate like me, you may want two squares.)
Powdered sugar, optional

Directions for Crust:
  1. In a bowl, combine water, oil, egg, and brownie mix until well blended.
  2. Grease and flour a 12 inch pizza pan. Spread brownie mix onto pizza pan (my pizza pan died, so I ended up using a cake pan).
  3. Bake for 25 minutes at 350 degrees F.

Directions for Topping:
  1. Beat together egg, sugar, vanilla, and cream cheese until smooth. 
  2. Spread evenly over the crust. 
  3. Bake 15 minutes. Cool on a cooling rack.

Directions for Finishing:
  1. Before serving, place strawberries and bananas on the cream cheese topping. If you place the bananas on too long before serving, they will brown.
  2. Drizzle chocolate over the fruit. (I melted my square in the microwave on a plate. Once it was melted, I scrapped it into a snack size Ziploc bag, sealed the bag, and snipped an end off. I then used the bag as a decorating bag, and gently squeezed to drizzle the chocolate on.)
  3. Shift or sprinkle powdered sugar on top. (I used a small metal strainer to dust the sugar on.)

Refrigerate any leftovers.
